Ok well mostly Fish, Ha!


                                    EZ Cheesy Fish Chowder

                   Preparation is a snap using idahoan's creamy potato soup mix
                   and the benefits of Salmon is well known. This is a good soup for
                   dieters, because of the fish. Lean protein is a must for any dieter.


                2 packs Creamy Potato Soup Mix, i used Idahoan's
                8 Swiss Cheese slices, torn up. I tore up by hand when adding to pot
                4 Salmon Filets, baked, cut up w fork
                2 Tablespoons Chicken Boiullion
                Fish Seasoning, coat fish for baking.

                 Preheat oven to 400* then bake Salmon, i sprinkled a little Fish
                 seasoning  then baked for 20 minutes.

                 Once Salmon is almost done add your soup mix &  water to a pot, then
                 add your Salmon, and Bouillion. In the last five mintes add the swiss.
                 Serve with biscuits if desired.

                 A yummy pleasing to the palate soup , for a delicious warm but light weeknight
                 meal on these cold winter nights

                                       Easy Fish Tacos n Chipotle Mayo



                 4 Cod Fish Fillets cooked (Baked In 425* for 25-30 mins)                                                                              4 Cups Of Lettuce (Can buy pre-shredded, Just don't 4get to Rinse)                                                              2 Cups Of  Shredded Mexican Blended Cheeses                                                                                          Jar of Chipotle Mayo, I used Kraft.                                                                                                              2 Limes, quartered                                                                                                                                      2 Tomatoes

                 8Corn Tortillas (Sometimes I use Low carb Flour tortilla)


             Prepare Fish according to package directions, Meanwhile Rinse the                                                              lettuce( Or even Cabbage) Dice tomatoes. Cut Limes in quarters for                                                              easy squezing, Wrap Tortillas in a paper towel and warm in Microwave                                                          for 30 seconds or more if necessary. By this time Fish is ready to come                                                        out of oven, 

           Then build your taco. Place 2 tortillas on a plate, top with crumbled                                                        Fish piece, Cheese, Lettuce and Tomato, then squeeze the Chipotle                                                    Mayo then squeeze a little lime juice on the tacos, Eat and enjoy. 


            Do be sure to use 2 tortillas if using corn they are pretty fragile so two works                                                 best , If using Flour tortilla u only use one However this recipe in my opinion                                                   taste better with corn Tortillas.


           For a low-carb option omit the Tortillas and it becomes a great protein(Fish) based                                         salad that is tasty and delicious change from the normal salads.


          This Meal is 30 minutes to the table. I bake more than I need when doing the fish                                            then later warm it up in the microwave and make a quick fish salad that takes less                                          than ten mins. to put together. 


          Fish Tacos are Just That Easy to make!
